Grandma D's Ricotta & Spinach Pie

This one comes straight from my Great Grandmother's Cookbook.  She died a month shy of 103 years old and was still cooking for her sons almost up until her last days. This spinach pie is super tasty, but like many passed down family recipes there were a lot of estimates or guesses when trying to make it.   Once I navigated the recipe I discovered its fairly easy to make and the result is a super tasty and creamy pie that is not dietetic but a great way to eat your spinach.  

Ingredients:
1 unbaked pie shell
1 pkg spinach squeezed almost dry
1 lb ricotta cheese
1 large egg
1 tsp. nutmeg
1 tsp. salt
8 Tbsp. grated Italian Cheese (plus more for on top)
1/3 to 1/2 Cup flour (adjust - don't make filling to hard, judge yourself)
4 Tbsp butter (plus more for on top)

  • Preheat oven to 350F.
  • Mix the ingredients to create filling.  Add flour last, adjusting to make filling consistency as desired.  Don't making filling to hard.   
  • Spread the filling into an unbaked pie shell.
  • Sprinkle with grated cheese & butter to taste.
  • Bake about 40 minutes until puffy and crusty.
