YUMMY CRUMB CAKE

This one came from my mom's friend.  It's delicious and like a true NY crumb cake.   It's all crumbs, thats what makes it so good.  My husband actually got requests for my crumb cake for his company's Christmas Lunch.

Suggestion: If your making a square or round 9 inch pan cake you can probably use this recipe as is, though I usually double the cake batter and leave the crumb recipe as is.   Depends on how much cake to crumb ratio you want.  If your going to make a large crumb cake, like the one at the bottom of this post you probably will want to even triple the cake batter recipe, but you can still use the same amount of crumbs or double it if you want a lot of crumbs.  Crumbs go a long way in this recipe.

For the Cake:

1 1/2 Cup Flour
1/2 Cup Sugar
1 Tbsp Baking Powder
1/2 Stick Margarine or Butter
1 Egg
1/2 tsp Vanilla
1/2 Cup Milk

  • Mix flour, sugar, and baking powder.
  • Cut in butter.
  • Add egg beaten, vanilla and milk (which has already been mixed together.)
  • Spread with a moist knife onto a greased cookie sheet.

For the Crumbs:
1 lb. margarine or butter melted and cooled.
4 cups flour
2 cups sugar
1 Tbsp cinnamon

  • Mix all these ingredients to make crumbs and put on top of cake.
  • Bake at 325 degrees for 20-30 minutes.
  • Let cool the dust with powdered sugar.
