Cherry Almond Vanilla Cupcakes

A delicious cupcake, especially if you love cherries like me.  The Cherry, Almond, Vanilla cupcake combines three great flavors into a tasty and pretty treat.   These yummy cupcakes were brought to you by Better Homes and Gardens.  For the complete recipe see their website: Cherry-Almond Vanilla Cupcakes Recipe

The Cupcakes:

They were fairly simple to create, though a few tips.  When making the cupcake add a tiny bit more vanilla extract then called for.  I always error on the side of to much vanilla when baking.   I altered the recipe slightly putting whole cherries, rather then halves, in the center of the cupcake.  I happen to be a big fan of maraschino cherries, so it was a no brainer to me.  I think it made the inside of the cupcake juicy.








The Icing:


The maraschino cherry juice should make your icing pink enough, but if you want a real rich pink you may want to add a drop of red food coloring.  When adding the cherries on top be sure to shake off the excess juice or you will get the cherry juice splatters on the cupcakes (like you see here in the photos.)
