For the cake mix I cheated, using boxed cake mix. I chose a yellow cake from Duncan Hines. Your pan(s) should have cooking directions.
The icing was homemade decorator icing. I love this recipe. It is super sweet but it holds its shape well and stays pure white. KIDS LOVE IT!!!! For adults it is good in small doses. I have tried a lot of decorator icing recipes and this one is my favorite. I keep all the ingredients on hand since they really do't go bad. This way I can whip out a batch of decorator icing at a moments notice.
Decorator Icing Recipe:
1 Cup Crisco
1 lb. SIFTED confectioners sugar
3 Tbsp Water
1 tsp clear vanilla
1 pinch of salt
- With an electric mixer at medium speed cream 1 cup of Crisco and 1 lb. of sifted confectioner's sugar. Add 3 Tbsp water. For better flavor add 1 tsp. vanilla (clear is best) and a pinch of salt.
- Continue beating until blended. Scrape bowls and beaters during mixing. Beat frosting only enough to blend thoroughly as excessive beating will result in a very soft frosting. Do NOT UNDER beat. Frosting should be white, smooth and light.
- Place in a plastic container & cover lightly. This frosting will keep in the refrigerator an indefinite time. When working with this frosting keep it covered with a damp paper towel or handy wipe.
Separate the icing and tint it into different pinks and reds, leaving some icing white. The hearts are simple. Give each cake a crumb coat and set in the fridge for about an hour. Then cover with a second coat. Using a star tip (I suggest 24 or 27) trip the cupcake. Then add writing with a thin round tip (such as 1 or 2).
